A wall oven is a box that holds a temperature. Almost every complaint about one reduces to heat going somewhere it was not asked to go, or a sensor reporting a temperature that is not the one in the cavity.
Runs cold, runs hot, takes an hour to preheat
The first question is whether the oven is wrong by a consistent amount at every setting, or wrong by different amounts at different settings.
A consistent offset — twenty-five degrees low at 350 and twenty-five low at 425 — points at the temperature sensor or its calibration. The sensor is a resistance probe; as it ages its resistance curve shifts, and the control faithfully holds the wrong number. That is a straightforward diagnosis and usually a straightforward part.
An inconsistent error is a heat-loss problem, and it is more interesting. The oven reaches 300 easily and then struggles above 400, or preheats in thirty minutes instead of twelve. Heat is leaving faster than the element can put it in. In practice that means the door gasket, the door glass pack, or an element that has partially failed and is delivering less than its rated wattage. A gasket that has hardened at the corners will pass its own inspection by hand and still bleed heat continuously.
The tell owners notice first is not the food. It is a mark on the underside of the cabinet above the oven, or a cabinet door immediately above that has started to discolour. That is escaping heat drawing a picture of where the seal failed.
After the self-clean cycle
We are called out to dead-after-self-clean ovens more than to any other single oven fault, and it is worth understanding why so it can be avoided.
A pyrolytic clean cycle takes the cavity far above any cooking temperature and holds it there. Everything around the cavity — the door latch motor, the thermal fuse, the wiring insulation in the top of the cabinet, the control board a few inches above the cavity roof — spends that hour at the top of its design envelope. Anything that was already tired does not survive it. A thermal fuse that opens is doing its job; a latch motor that seizes with the door locked is the part failing.
None of that is a reason to never self-clean. It is a reason not to run one the night before you need the oven, and a reason to scrape out the heavy soil first so the cycle has less to do.
Warming drawers
Warming drawers are simple and they fail simply: a low-wattage element, a thermostat, and a slide mechanism. On the coast the slides are the recurring problem. Salt air reaching the drawer runners through the cabinet gap stiffens them, the drawer stops closing square, the seal opens along one side, and the drawer no longer holds temperature. Owners describe it as the drawer having got weaker. The element is usually fine.
What the coast and the cabinetry add
Salt reaches oven hinges the way it reaches every other hinge in a house within a mile of the Atlantic. A slack hinge on a heavy oven door does not just feel loose — it stops the door pulling flat against the gasket over the last few degrees of travel, which brings us back to heat loss.
The opening matters as much as the appliance. A wall oven vents through a defined path, usually above or below the door, and a stack that has been finished tight with trim or filler during a kitchen refresh can close enough of that path to raise cavity temperatures and cook the electronics behind the control panel. Where an oven is stacked with a warming drawer or a steam oven, the whole column shares those clearances, so a fault in one appliance is worth checking against the installation of all of them.
Getting it out is the other reality. A wall oven is a two-person lift out of its stack, it needs its door supported or removed, and it needs floor in front of it to be set down on. Where flooring has been built up under the opening since installation — a common outcome of a later refresh — the appliance no longer clears the sill, and that is a job in itself before the repair starts. It belongs in the estimate rather than in a surprise.
