Built-in coffee systems

The most mechanical appliance in the kitchen and the one with the shortest tolerances. Most faults are in the brew unit, the grinder or the milk path.

What we get called for

Of everything Thermador installs in a kitchen, the built-in coffee machine has the most moving parts and the tightest tolerances. It grinds, tamps, pumps against pressure, heats, travels a mechanism through a cycle and returns it to a home position, several times a day, in a cabinet the width of a drawer. Almost everything that goes wrong with one is mechanical, and almost all of it is reachable through the front.

Flow, and what changes it

A shot that used to pour in twenty-five seconds and now takes forty is telling you the resistance in the circuit has gone up or the pressure behind it has gone down. Those are different faults and they are separated by where the resistance is.

Grind is the first thing to eliminate, because it is the one variable the household changes without meaning to. A finer grind, a fresher bean or a different roast all alter flow, and owners commonly adjust the setting to compensate, which masks a developing fault for a few weeks and then stops working. We ask what has changed about the beans before we ask anything about the machine.

If the grind is genuinely unchanged, the next candidates are the brew unit screens and seals, then the pump and its pressure relief. A brew group that has been in service for years accumulates coffee oils that harden around the seals and in the screen mesh; the unit still travels, but the water finds a different path through the puck than the one it was designed to take, and the crema thins before the time changes.

The travelling mechanism

The brew unit is the part that distinguishes this appliance from everything else in the kitchen. It moves: it receives the dose, compresses it, holds it against pump pressure, ejects the puck and returns home. A unit that meets resistance part-way through that travel will stall and report that it cannot reach its home position.

Resistance comes from three places, and they are worth separating before anything is replaced. Hardened coffee oil around the seals is the most common and the most recoverable. A worn or dry drive gear is the second, and it usually announces itself with a change in the sound of the cycle. A foreign object — a stone in the beans, a fragment of packaging — is the third, and it is the one that bends something if the machine is asked to try again.

We take the unit out and work it by hand before we power anything. A mechanism that is stiff cold will not be diagnosed accurately hot.

Grinders

Grinders are a separate job and usually a simpler one. Burrs wear. A burr set that has ground a few hundred kilos of beans produces a coarser grind at the same setting, and the machine has not lost its calibration — the burrs have lost their edge. The tell is that every setting has drifted in the same direction at once.

Noise is the other complaint, and it separates cleanly. A rising whine is usually the motor or its bearing. A rattle or a crack is usually something in the beans that should not be there. A grinder that has been fed oily dark roasts for years may simply be packed, and a strip and clean recovers it.

Milk systems and drainage

Thin, bubbly foam almost always means the air path is drawing wrong rather than that the pump is weak. Milk systems fail at the seals, the air intake and the narrow tube between them, and every one of those is a wear part rather than a repair.

Water standing in the drip tray after every cup is normal in small amounts — the machine purges to clear and temper the group. In quantity it means a seal is weeping internally, and that matters more than it looks like it should, because the electronics sit below the water circuit in most built-in installations. A machine that has started weeping is on a clock, and the clock is not long.

Access, and the part

A built-in coffee system is serviced from the front, which is the good news: the brew unit, the drip tray, the milk circuit and the water path all come out without disturbing the cabinetry. What does have to be planned for is the service position — the machine needs to come forward far enough on its runners to reach the rear connections, and where cabinetry or stone has been fitted tight since installation, that is part of the job.

Photograph the rating plate before you call. These machines run for years across production changes, and two that look identical from the front can take different brew units, seals or boards depending on when they were made. The serial number settles it, and it lets us check availability before the van is loaded rather than after.

    The built-in coffee machine kept stopping with a brew unit fault. He took the unit out, stripped it, renewed the worn seals and regreased the drive rather than selling me a complete assembly. Back to proper shots.
